1 lb Chicken breasts
1/2 a package of bacon
Marinade
1/4 cup of paleo pesto (the pesto in my fridge just happened to be paleo, just read the ingredients to make sure yours does not have vegetable oils, legumes, or dairy)
1/4 cup of olive oil
2 tablespoons lemon juice
1/4 cup chopped sundried tomatoes
1 tablespoon honey
- Mix all of your marinade ingredients together
- Poke holes or make slices into your chicken breasts so the marinade can get into all the crevices
- Marinate the chicken inside a ziploc bag in the fridge overnight (I didn't do this but I guarantee the flavors will be better if you do this)
- Cook 1/2 package of bacon till crispy and remove from pan
- Save bacon grease and sautee chicken in the grease (do not use all of the grease at once or you might have a FIRE)
- Cook until golden brown
- Chop up the bacon into bits and serve over the chicken
